做(zuò )法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。 -
