做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用(yòng )清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍(biàn ),放两(liǎng )勺油,待油(yóu )六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他(tā )材(cái )料,武火(huǒ )煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
