做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍,放(fàng )两勺油,待油六成(chéng )热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火(huǒ )煲一个半(bàn )小(xiǎo )时,下盐调味即可品尝。 -
