做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅(guō )盖焖(mèn )。 -
